Larry Toomer, owner and operator of the Bluffton Oyster Company, is a third-generation oysterman who has spent his life picking, cleaning, shucking, and selling oysters.
The Bluffton Oyster Company sits on the beautiful May River in Beaufort County. Its muddy bottom and record-breaking tides – 8-10 feet! – create an environment where oysters thrive.
East Coast oysters are prized above all others for their unique salty taste. Their natural marsh environment creates this flavor, which cannot be manufactured or recreated elsewhere.
South Carolina's oyster industry faces many challenges, including pollution and the absence of cultch. Sadly, in recent years we have begun importing oysters from other states and Asia to meet our demand.
Once an oyster has been removed from the water, it begins consuming its own sugars to try to stay alive. By the time imported oysters arrive in South Carolina, after a long journey often in the back of a semi-truck, their flavor has diminished. This is why local oysters reign supreme in quality and taste.
